1. Preparation
Gather all the ingredients and utensils needed for the recipe.
Clean the shrimp under cold water and devein them if necessary.
Thinly slice the galangal, lemongrass, and kaffir lime leaves.
Chop the chili peppers and set aside.
Prepare the mushrooms by cleaning and slicing them.
Chop the cilantro for garnish.
2. Cooking
In a medium pot, bring 4 cups of water to a boil over high heat.
Once boiling, add the sliced galangal, lemongrass, and kaffir lime leaves to the pot.
Lower the heat to medium and let the broth simmer for 5 minutes to infuse the flavors.
Add the mushrooms and continue to simmer for an additional 3 minutes.
Next, add the shrimp to the pot and cook until they turn pink and opaque, about 2-3 minutes.
Stir in the fish sauce, lime juice, and sugar, adjusting according to taste.
Add the chopped chili peppers for desired spiciness.
Remove from heat and garnish with fresh cilantro before serving.
