1. Preparation
Rinse 1 cup of quinoa under cold water in a fine mesh strainer to remove bitterness.
Zest 1 lemon using a microplane or zester, and set aside.
Juice the same lemon, measuring out 3 tablespoons of fresh lemon juice.
Chop 2 tablespoons of fresh parsley and set aside.
Prepare a small bowl and whisk together 1/4 cup tahini, 3 tablespoons lemon juice, and a pinch of salt until smooth.
2. Cooking
In a medium saucepan, add the rinsed quinoa and 2 cups of water. Bring to a boil over high heat.
Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the water is absorbed.
Remove the saucepan from heat and let it sit, covered, for 5 minutes to allow the quinoa to fluff.
After 5 minutes, uncover the quinoa and fluff it with a fork.
In a large bowl, combine the fluffed quinoa, tahini mixture, lemon zest, and chopped parsley. Stir gently until everything is well combined.
3. Serving
Taste and adjust seasoning by adding more salt or lemon juice as desired.
Serve warm or at room temperature, garnished with extra parsley if desired.
