1. Preparation
Cook the noodles according to the package instructions. Drain and rinse under cold water to stop cooking.
In a medium bowl, mix 4 tablespoons of creamy peanut butter, 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, 1-2 tablespoons of sriracha (based on your spice preference), and 1 tablespoon of rice vinegar until smooth.
Chop 2 green onions and 1 clove of garlic finely. Set aside.
Optional: Chop some peanuts and prepare any additional vegetables (like bell peppers or carrots) you wish to add.
2. Cooking
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat.
Add the chopped garlic and green onions to the skillet, stirring for about 1 minute until fragrant.
If using, add any additional vegetables and stir-fry for about 3-5 minutes until just tender.
Add the cooked noodles to the skillet and pour the peanut sauce over them. Toss everything together, ensuring the noodles are evenly coated in the sauce and heated through, about 2-3 minutes.
Remove from heat and serve hot, topped with chopped peanuts and extra green onions if desired.
