1. Preparation
Gather all ingredients and have them ready.
Finely chop the green onions, separating the white and green parts.
Crush the garlic and ginger, then mince them.
In a small bowl, combine the sesame paste, soy sauce, rice vinegar, and chili oil to create the sauce.
Cook the noodles according to the package instructions until al dente, then drain and set aside.
2. Cooking
Heat a tablespoon of oil in a large skillet over medium heat.
Add the ground pork and cook until browned, breaking it apart with a spatula.
Stir in the minced garlic and ginger and cook for 1-2 minutes until fragrant.
Add the white parts of the green onions and stir-fry for another minute.
Pour in the prepared sauce and let it simmer for a few minutes until lightly thickened.
Add the cooked noodles into the skillet with the pork and sauce. Toss well to coat the noodles evenly.
3. Serving
Transfer the noodles to serving bowls.
Garnish with the reserved green parts of the green onions and additional chili oil if desired.
Serve immediately for the best texture and flavor.
