Ingredients (1 serving)

  • 1. Zucchini
  • 2. Fresh ginger
  • 3. Soy sauce
  • 4. Sesame oil
  • 5. Rice vinegar
  • 6. Honey
  • 7. Green onions
  • 8. Sesame seeds

Cooking method

1. Preparation

Wash the zucchinis thoroughly under cool running water.

Using a spiralizer, create zucchini noodles from the zucchinis. If you don't have a spiralizer, a vegetable peeler can be used to create thin strips.

Peel and finely grate the ginger.

Finely chop the green onions, separating the white and green parts.

In a small bowl, combine soy sauce, sesame oil, rice vinegar, honey, and grated ginger to make the dressing.

2. Cooking

Heat a large skillet over medium heat and add a teaspoon of sesame oil.

Add the white parts of the chopped green onions to the skillet and sauté for about 1 minute until fragrant.

Add the zucchini noodles to the skillet and sauté for 3-4 minutes until they are slightly tender but still firm.

Pour the prepared sesame ginger dressing over the zucchini noodles. Toss well to ensure the noodles are evenly coated.

Cook for another 1-2 minutes until everything is heated through.

Remove from heat and garnish with the green parts of the chopped green onions and sesame seeds.
