1. Preparation
Wash 2 medium cucumbers under cold running water.
Slice the cucumbers into thin rounds or half-moons, depending on your preference.
Place the cucumber slices in a large mixing bowl.
Chop 2 green onions finely and add them to the bowl with cucumbers.
Gather the remaining ingredients: 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of sesame oil, 1 teaspoon of sugar, and 1 tablespoon of sesame seeds.
2. Mixing Dressing
In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of sesame oil, and 1 teaspoon of sugar.
Whisk the mixture until the sugar dissolves completely and all ingredients are well combined.
3. Combining Ingredients
Pour the dressing over the sliced cucumbers and green onions in the mixing bowl.
Toss the ingredients gently but thoroughly to ensure the cucumbers are evenly coated with the dressing.
4. Serving
Let the salad sit for about 5 minutes to allow the flavors to meld.
Sprinkle 1 tablespoon of sesame seeds over the salad before serving.
Serve chilled or at room temperature in a serving dish.
