1. Preparation
Preheat your oven to 475°F (245°C).
Wash and dry 200g of fresh spinach leaves.
Toast 50g of pine nuts in a dry skillet over medium heat for 3-5 minutes, stirring frequently, until golden and fragrant.
Chop 2 cloves of garlic finely.
Prepare a pizza dough (store-bought or homemade) and roll it out on a floured surface to your desired thickness.
2. Assemble the Pizza
Transfer the rolled-out pizza dough onto a baking sheet lined with parchment paper.
Spread 200g of pizza sauce evenly over the dough, leaving a small border around the edges.
Evenly distribute the fresh spinach over the sauce.
Sprinkle the toasted pine nuts over the spinach.
Add 150g of shredded mozzarella cheese and 50g of ricotta cheese dolloped in small amounts across the pizza.
Sprinkle salt, pepper, and 1 teaspoon of dried oregano over the top for added flavor.
3. Bake the Pizza
Place the assembled pizza in the preheated oven.
Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
Remove from the oven and let it cool for a couple of minutes before slicing.
