1. Preparation
Gather all ingredients: soba noodles, peanut butter, soy sauce, sesame oil, rice vinegar, garlic, ginger, green onions, bell pepper, and cucumber.
Prepare the vegetables: thinly slice the bell pepper and cucumber, and chop the green onions.
Mince the garlic and ginger.
2. Cooking Noodles
Bring a large pot of water to a boil.
Add soba noodles to boiling water and cook according to package instructions, usually about 4-5 minutes.
Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process. Set aside.
3. Making Peanut Sauce
In a bowl, combine peanut butter, soy sauce, sesame oil, rice vinegar, minced garlic, and ginger.
Whisk the mixture until smooth. If it's too thick, add a little warm water until the desired consistency is reached.
4. Assembling the Dish
In a large mixing bowl, add the cold soba noodles.
Pour the peanut sauce over the noodles and toss to combine evenly.
Add the sliced bell pepper, cucumber, and chopped green onions to the bowl and gently mix.
5. Serving
Transfer the peanut soba noodles to serving plates or bowls.
Garnish with additional green onions or crushed peanuts if desired.
Serve chilled or at room temperature.
