1. Preparation
Wash and trim the ends of 500g of green beans.
Peel and finely chop 1 medium onion.
Peel and chop 2 cloves of garlic.
Chop 2 medium tomatoes into small pieces.
Measure out 1/4 cup of olive oil and set aside.
Chop 1/4 cup of fresh parsley for garnish.
2. Cooking
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
Stir in the garlic and cook for an additional 1 minute until fragrant.
Add the chopped tomatoes to the pot and cook for 5-7 minutes until they start to break down.
Add the green beans to the pot and mix well with the tomato mixture.
Pour in 2 cups of water and season with salt and pepper to taste.
Bring the mixture to a boil, then reduce the heat to low and cover the pot.
Let it simmer for about 30-40 minutes, stirring occasionally, until the green beans are tender.
Once cooked, taste and adjust seasoning if necessary.
Remove from heat and let it sit for a few minutes before serving.
3. Serving
Serve warm, garnished with the chopped parsley.
This dish pairs well with crusty bread or rice.
