1. Preparation
Wash the cucumbers under cold water to remove any dirt.
Thinly slice the cucumbers into round disks, about 1/8 inch thick.
Rinse fresh mint leaves under cold water and pat dry with a paper towel.
Chop the mint leaves finely.
In a bowl, combine chopped mint with cream cheese, lemon juice, salt, and pepper. Mix until smooth.
2. Assembling the Sandwich
Lay out the slices of bread on a clean surface.
Spread a generous layer of the mint and cream cheese mixture on one side of each slice of bread.
Layer the cucumber slices evenly over half of the bread slices (on the cream cheese side).
Sprinkle a little extra salt and pepper over the cucumber slices for added flavor.
Top with the remaining slices of bread, cream cheese side down, to form the sandwiches.
3. Finishing Touches
Using a sharp knife, cut the sandwiches into quarters or halves, as preferred.
Arrange the sandwich pieces on a serving plate.
Garnish with additional mint leaves on top for a decorative touch.
