1. Preparation
Gather all ingredients: chicken breast, cashews, bell pepper, onion, green onions, garlic, soy sauce, oyster sauce, cornstarch, and vegetable oil.
Cut the chicken breast into bite-sized pieces and place in a bowl.
Chop the bell pepper and onion into thin strips.
Mince the garlic.
Slice the green onions; use both white and green parts.
2. Marinate Chicken
Add 1 tablespoon of soy sauce and 1 teaspoon of cornstarch to the chicken pieces.
Mix until the chicken is well coated and set aside for 10 minutes.
3. Cooking
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
Add the marinated chicken pieces to the skillet in a single layer. Cook for 5-7 minutes until golden brown, stirring occasionally.
Remove the chicken from the skillet and set aside.
In the same skillet, add another tablespoon of oil if needed, then add the minced garlic, chopped onions, and bell pepper. Stir-fry for 2-3 minutes until the vegetables are tender.
Return the chicken to the skillet.
Add 1/4 cup of cashews, 2 tablespoons of soy sauce, and 1 tablespoon of oyster sauce. Stir to combine and cook for an additional 2 minutes.
If the sauce is too thick, you can add a little water to reach desired consistency.
Sprinkle the sliced green onions on top before serving.
