1. Preparation
Boil 4 medium-sized potatoes until soft. Drain and let cool.
Peel the boiled potatoes and mash them in a large bowl until smooth.
Chop 1 small onion finely.
Chop fresh coriander leaves finely.
Chop green chili (to taste) finely.
Gather all spices: cumin powder, coriander powder, garam masala, red chili powder, and salt.
2. Make Aloo Tikki
Add the chopped onion, coriander, green chili, and spices to the mashed potatoes.
Mix well until all ingredients are combined evenly.
Divide the mixture into equal portions and shape them into round patties (about 1/2 inch thick).
Heat oil in a non-stick skillet over medium heat.
Fry the patties until golden brown on both sides, about 3-4 minutes per side.
3. Assemble Chaat
Place 2-3 Aloo Tikkis on a serving plate.
Drizzle with around 2 tablespoons of yogurt.
Add 2 tablespoons of tamarind chutney and mint chutney on top.
Sprinkle with chaat masala, sev, and fresh coriander leaves.
Garnish with pomegranate seeds if desired.
