1. Preparation
Gather all the ingredients: onions, garlic, ginger, bell pepper, tomatoes, vegetable broth, ground peanuts, oil, salt, and pepper.
Finely chop the onions, bell pepper, garlic, and ginger.
Dice the tomatoes and set aside.
Measure out the ground peanuts and broth.
2. Cooking
In a large pot, heat 2 tablespoons of oil over medium heat.
Add the chopped onions, garlic, and ginger to the pot and sauté for 5 minutes until the onions are translucent.
Stir in the bell pepper and cook for another 3 minutes until softened.
Add the diced tomatoes and cook for 5 minutes, stirring occasionally until they break down.
Pour in 4 cups of vegetable broth and bring to a boil.
Lower the heat to a simmer and stir in the ground peanuts, salt, and pepper.
Let the soup simmer for 20 minutes, stirring occasionally to prevent sticking.
If the soup is too thick, add more broth or water to reach desired consistency.
Adjust seasoning if necessary and serve hot.
