1. Preparation
Gather all the ingredients: 2 medium carrots, 1 cucumber, 1 red bell pepper, 1 onion, 3 cloves of garlic, and fresh chili (optional).
Thinly slice the carrots, cucumber, and red bell pepper.
Finely chop the onion and garlic.
If using fresh chili, slice it thinly.
In a bowl, combine the sliced vegetables and set aside.
2. Pickling Liquid
In a saucepan, combine 1 cup of vinegar, 1 cup of sugar, and 1 cup of water.
Add 1 teaspoon of salt and stir the mixture over medium heat until the sugar dissolves.
Once dissolved, add 1 teaspoon each of turmeric powder and coriander powder to the mix.
Bring the mixture to a gentle boil for 2-3 minutes.
Remove from heat and let the pickling liquid cool for about 10 minutes.
3. Combine and Marinate
Pour the cooled pickling liquid over the prepared vegetables in the bowl.
Add the chopped garlic and chili (if using) to the mixture.
Toss the vegetables until they are well-coated with the pickling liquid.
Transfer the mixture to a glass jar, pressing down to eliminate air bubbles.
Seal the jar and let it marinate in the refrigerator for at least 1 hour before serving for best flavor.
